Executive Chef, WanderWild Experiences
Executive Chef, WanderWild Experiences
Some people chase horizons. Peter chases flavour and after nearly four decades in professional kitchens, he has fed just about every kind of crowd there is: a dinner for fifty, a banquet for five thousand, and everything in between.
Peter trained in commercial catering at ML Sultan before working his way up through some of South Africa's biggest hospitality names. He spent five years as executive sous chef at the Elangeni Hotel, two more as executive chef at a five star Three Cities property running six catering outlets, and eight years as executive chef and catering manager at the Cape Town International Convention Centre, where he led a kitchen brigade of over a thousand staff and delivered everything from intimate dinners to functions on an enormous scale.
From there it was the Cape Sun Hotel, and for close to thirteen years now, he has headed up the events, entertainment and conference kitchens at Sun International's Sun City, in the heart of the North West province.
Along the way, Peter has plated food for royalty, presidents and the kind of occasions where there is no room for a second attempt, all without losing the warmth that makes him as comfortable handing a plate to a head of state as he is sharing a laugh and a bite to eat with a bearded wanderer around a fire at a festival. That range, equally at home in black tie banqueting halls and under open skies, is exactly why WanderWild wanted him.
Because here is the thing about a proper adventure: the fire, the dirt roads and the big skies matter, but so does what is on the plate when the day is done. Peter is the man who makes sure a WanderWild experience never has to choose between wild and exceptional.
Expect the kind of food that turns a campsite dinner into something genuinely memorable and a shared table into the best part of the whole trip.
Executive food, after a long day in the sunshine. Every Wanderer deserves it.
